Chaco Ramen in Bondi is the kind of place that reminds you why a simple bowl of ramen, done exceptionally well, can feel like a full dining experience. From the moment the food arrives, it is clear that this is not rushed, generic comfort food. There is real care here, both in flavour and execution. The broth is the standout. Rich, deep, and layered, it has that slow-built intensity that tells you time and attention have gone into every pot. It is comforting without being heavy, savoury without becoming overpowering, and balanced in a way that keeps you going back for another spoonful. The noodles have the right bite and texture, holding the broth beautifully and giving each mouthful substance and character. The toppings are equally thoughtful. Everything feels deliberate rather than thrown in for effect. The chashu is tender and flavourful, the egg is cooked with precision, and the overall bowl feels composed rather than cluttered. It is the sort of ramen that manages to feel both satisfying and refined. What also makes Chaco Ramen special is that it does not rely on hype alone. Bondi has no shortage of good places to eat, so standing out here means something. Chaco earns its r

Yummy! Absolutely love it β€” already came back a few times. You don't need to book for most of times. Highly recommend: Wague Rolls, smoked flavor and spicy chicken katsu ramen. Good service and super efficient.

The food here is always great! Love their ramens and the set menu is good value. Good beer too. Space is small and can be a wait on tables. Service is slow though especially to get food. It comes out at odd times - ramen comes before entrees or set menu all comes out together (hard to fit it on the table and food gets cold trying to eat it all at the same time).

My partner and I dropped in for a quick dinner tonight. It was not too busy for a Sunday night, so no booking was necessary. We enjoy our Ramen and since leaving Canberra and our favourite place (Ikigai Ramen) we've been working to find somewhere that good. I ordered the 'Occy Kara-age' and a beer for starters. The octopus was good and tasty. For mains, we both ordered the 'Fat Soy' ramen 🍜 with high expectations. Initial impressions were very good. The broth was rich and tasty. The chiasu pork fell apart and the egg was tasty. But the more I ate the more I realised it was very salty. Luckily I had beer 🍺 to make it easier. Not too bad.

I definitely need more than 5 starts for this place…. So imagine all 20 are for Mana and the crew at Chaco Ramen Bondi. Food is excellent, drink selection, excellent and the service or outstanding! Love every second and all the dishes that were going to other tables looked as delicious as ours! The vegetarian ramen was so good - I only got a snap at the end, and the second photo shows a happy spoonful 😜just a gem of a joint!
