Entree/sides and dessert cake was deliiiiicious 10/10. So so good. We got the oysters, steak tartare, and escargot - whatever was in that XO sauce; was that anchovies? Delicious. Would love to try other dishes next time. We realised we mostly ordered meat & potato haha! We got too excited to try the Bavette steak & Lamb. We were having a chill night and probably should've gotten a bubbly non alcoholic drink to pair. Had the best food coma though. The raspberry birthday gateux was perfect, the raspberry & acidity cut through the amount of delicious food we had. We were beyond grateful! Very happy with the service, from the front of house greeting to our attentive server. It was for my partner's 30th and we loved the jazz music, ambiance and detailed care. We will definitely be coming back. Thank you, Hubert team!

Restaurant Hubert is one of those places that truly lives up to the hype. From the moment we walked in, the warm Parisian-inspired atmosphere and live jazz created such a vibrant yet intimate dining experience. We started with cocktails, and they were exceptional—beautifully balanced and a perfect way to begin the evening. For my appetizer, I had the escargot, which was rich, buttery, and packed with flavor. For the main, we shared the Wagyu Kiwami Bavette, cooked perfectly and incredibly tender. On the side, the salad provided a fresh contrast, while the pommes Anna were wonderfully crisp on the outside and soft, buttery, and indulgent inside. To finish, we had the crème de riz et granité, which was light, refreshing, and a unique way to end such a satisfying meal. What made the night even more memorable was the live jazz performance—it added so much character and energy to the restaurant. The combination of outstanding food, expertly crafted drinks, attentive service, and live music made this place absolutely worth a visit.

My favorite restaurant in Sydney by far! Restaurant Hubert is such a unique place — hidden underground with a beautiful old Parisian-style atmosphere that makes you feel like you’ve stepped back in time. The dim lighting, vintage interior, and live music create an amazing dining experience. The food was excellent across the board, but the Duck Parfait was absolutely superb and is a must-order in my opinion. Having dinner with a nice glass of wine while enjoying the live music created such an incredible vibe. Definitely one of the most memorable dining experiences I had in Sydney, and I would happily come back again and again.

⭐⭐⭐⭐⭐ How can we not give 5 stars when everything is this perfect? The atmosphere is absolutely beautiful romantic, elegant, with live music playing in the background. The restaurant is spacious and not cramped at all, with luxurious service, soft warm lighting, European-style ambience, and candlelight on every table. It feels truly special from the moment you walk in. We ordered several dishes, but the one I kept coming back to was the Roe Boat. Everything in this dish works so well together the fragrant uni combined with the salty trout roe is perfectly balanced and unforgettable. My wife’s favorite was the Kingfish with brown butter and bonito soy, especially the brown butter sauce, which was incredibly aromatic and rich. The Saint Jacques et Tartine de Crevettes was a bit underwhelming for us it felt quite ordinary, more like a standard fried shrimp dish and not very special compared to the price. The Kiwami 9+ Wagyu was the highlight of the night honestly the best steak I’ve had this year. Extremely tender, melt-in-your-mouth, and easily the best dish overall. Somewhere else has probably done it better — that basically sums up the experience at Hubert. Every dish felt like a weaker version of something you’ve had before. The dinner started on a low with the roe boat. No real creativity here — just uni, caviar, and roe thrown together with little thought behind it. At $21 for a tiny bite, it felt lazy more than luxurious. The beef tartare was average. The beef was diced too finely, losing that natural bouncy, slightly chewy texture tartare should have. A slightly larger cube would’ve given it more life. The tiny shoestring fries added nothing except crunch for the sake of crunch. Overall, bland and forgettable. The pate en croute also lacked depth. The wasabi-mustard sauce helped lift it slightly, but not enough to save the dish from feeling flat. Same story with the souffle, quite uninspiring. Duck parfait was decent. Smooth texture, no graininess, with a bright sweetness that worked well. But serving it with cold, hard sourdough completely threw the balance off.
