We arrived close to noon and there was still a queue. Luckily, there were only two of us, and we were willing to share a long table, so we didn't have to wait long. Having just finished a flat white, I couldn't drink another, so I only ordered a chicken salad. I don't know why this restaurant has such high online ratings; the fried chicken was quite good, but just "good as fried chicken should be." Actually, there was something else that bothered me: while we were eating, I vaguely heard several servers chatting and swearing.

Found this gem whilst in Sydney for a course! Absolutely blown away by its quality of food and coffee!!! The fried chicken waffle was hands down one of the best I’ve ever had! The fried chicken was so tender and juicy! And the maple syrup sauce that comes with it just pair so well! And the waffle itself was so fluffy and so good!! The other scallion pancake that we ordered was also such a star on its own! It wasn’t like the typical Taiwanese scallion pancake that you’d expect, it was such a fluffy and wholesome pancake that pairs so well with its fluffy eggs and chili oil on its side! And the batch brew coffee was also just so good! Overall 5/5! Love it!!!

Popped in on a whim this morning, was looking for delicious coffee and breakfasts for a family of 4. Wait for a table wasn’t long, sat outside on a communal table, comfortable enough. Felice was our waitress, she was warm, friendly and very attentive. Aprox 30 min wait for breakfast which wasn’t too bad judging from how busy it was. The menu offered a few different options than other cafes, the bun I had was delicious perfect quantity. I had a double shot, oat flat white which was good, my husband mentioned his almond hot chocolate was one of the best he has had. The strawberry matcha was really yummy great equal parts of puree, oat milk and matcha. When paying we chatted to Leon and Felice, both absolutely lovely and friendly definitely great assets to this cafe. Lovely find.

The coffee is exceptional — smooth, well-balanced, and clearly crafted with care. Every sip feels intentional. The food is just as impressive: beautifully plated, fresh, and full of flavor without being overwhelming. You can tell quality ingredients are a priority. What really elevates the experience is the service. The staff are attentive, warm, and knowledgeable, making you feel genuinely valued rather than just another customer.

Absolutely love this place. Paramount Coffee Project is genuinely stunning and feels special the moment you walk in. The space is beautiful, lively, and always buzzing with a great vibe. Coffee is excellent and clearly a big focus, and the food is just as good, creative, full of flavour, and really well presented. Staff are friendly and handle the crowds well. Easily one of those cafés you’re happy to wait for and always look forward to coming back to.
